When Backup and Restore saves multiple backups it may not be readily apparent:

When using either the Windows 7 System Repair disc or your original Windows 7 installation DVD you may be puzzled at the lack of more than a single entry when prompted to “Select the location of the backup for the computer you wish to restore”


The secret is to select that entry and then click the ‘Next’ button.
Now you should see multiple entries which represent all the backups you have created that are still available for use in restoring your computer to an earlier date and time. Keep in mind that once your backup files reach the available disk space limitations older backups will be deleted as new backups are created.
